Pumpkin Chocolate Chip Cookies
Fall has officially arrived and pumpkin-everything is in season! Cornwall Manor’s Executive Chef shares his recipe for Pumpkin Chocolate Chip Cookies. Watch for these soft cookies to make an appearance in the Manor Shoppe when fresh baked goods are available for purchase on Mondays, Wednesdays and Fridays. Pumpkin Chocolate Chip Cookies

Ingredients
1.5 cups brown sugar- packed
¾ cup softened butter
1 cup pumpkin
1 tsp vanilla
2 eggs
1.5 tsp cinnamon
½ tsp cloves
¼ tsp nutmeg
2 cups oatmeal
1 cup flour
½ tsp baking powder
½ tsp baking soda
1 tsp salt
1.5 cups chocolate chips
Directions:
1. Cream brown sugar and butter and mix only until it’s incorporated. Add the pumpkin, vanilla and eggs. Mix just until incorporated. In a separate bowl, mix and sift the remaining ingredients except the chocolate chips.
2. Add the dried and sifted ingredients (bowl #2) into the mixing bowl that contains the butter/sugar/pumpkin mixture. Add chocolate chips and mix. Bake at 350 for 10-12 minutes and do not overbake. Cookies will appear to be rather soft but they will set up when cooled.
