Lemon White Chocolate Chip Cookies

A soft chewy lemon cookie is one magical thing. Adding white chocolate makes a perfect contrast to the tart lemon. The results are one amazing white chocolate lemon cookie! If you’re lucky, you can purchase these delicious cookies in the Manor Shoppe! A variety of baked goods and fresh breads are available on Mondays, Wednesdays and Fridays in the Manor Shoppe (located within the Freeman Community Center. Open Monday-Fridays 9 AM to 3 PM and Saturdays 11 AM to 1 PM).
Lemon White Chocolate Chip Cookies:
1 cup soft butter
2 cups sugar
2 eggs
1 teaspoon vanilla
1 ½ tablespoons lemon juice
1 ½ – 2 tablespoons lemon zest
3 cups flour
1 ¼ teaspoon baking powder
½ teaspoon baking soda
2 cups white chocolate chips
Cream butter and sugar until light and fluffy. Add eggs one at a time until light yellow in color. Add in vanilla, lemon juice and lemon zest, mix well and scrape down sides of bowl.
Combine dry ingredients in a separate bowl and stir with whisk. Add to creamed ingredients until combined.
Fold in white chocolate chips.
Scoop onto baking sheets and bake at 350F for 12-15 minutes, or until slightly golden at edges.
Yields 24 cookies.
